Formulation with pectin does not need to be excessively risky or expensive, and confectionery formulators may have a new solution from Bartek in Pecmate™ Pectin Enhancer.
Pecmate™ Pectin Enhancer in gummy and soft candies provides for:

Solutions for Common Formulation Challenges
Unlike gelatin, which can be re-melted and remains stable at a wider range of temperatures and pH levels, pectin is workable only under a precise set of parameters. Pectin will set between pH 3.2 and 3.6 – with the very narrow ideal pH range of 3.4 to 3.52. The traditional solution to alleviate changes in pH has been using a buffering agent, such as sodium citrate.
However, the slightest variations in sodium citrate itself can significantly impact pH in the solution, often leading to either pre-gelling or, conversely, no setting at all. Pecmate™ Pectin Enhancer, on the other hand, ensures batch consistency which significantly diminishes the risk of costly errors.
